Vegetables provide nutrients vital for health and maintenance of your body.

According to the USDA MyPlate guidelines, vegetables should make up the largest proportion on a meal plate. People who eat more vegetables as part of an overall healthy diet are likely to have a reduced risk of some chronic diseases.

However in 2013, the Food and Agriculture Organization of the United Nations (FAO) declared that Washington state was amongst the top ten regions globally for vegetable food waste.
